Mango Lassi recipe

Mango lassi does not need any explanation as everybody knows about it. Still for those who don’t know it is made from yogurt, mangoes, milk/water. It is thick, rich and creamy with lots of mango flavor. It is perfect for this summer. It is very refreshing and cooling beverage or dessert for hot weather.
When we get the box of mangoes this season, first I made aamras then I made this cold beverage Mango lassi. And third, I made mango mousse. I will post it soon.
Even I grew up in India, I always heard of salted lassi or sweet lassi or some flavored lassi but I have never heard of Mango lassi until I came to USA. Here almost all Indian restaurants serve mango lassi. So I thought of making it at home as dear husband loves anything from mango so do I.
Mango Lassi Recipe - Aam ki Lassi Recipe
I have added rose water to the lassi to give it some extra flavor and it tastes awesome. But it is optional. I have made without rose water and it tastes yummy as well. If you want you can garnish it with some pistachios instead of mint leaves.
Whenever you make Mango lassi, Please keep in mind that ‘all the ingredients have to be cold’. If not then make lassi and keep in refrigerator to chill and then serve. Because it taste best when it is chilled.
Preparation time: 10 mINS
INGREDIENTS
  • Mangoes – 3 medium or 3 cups (peeled, stone removed and chopped)
  • Plain Yogurt – 1 ½ cups
  • Milk or water – ½ cup
  • Sugar – to taste **Notes
  • Cardamom powder – ¼ teaspoon
  • Saffron – few strands (optional)
  • Rose water – 1 teaspoon (optional)
**Notes –
  • Sugar – my mangoes are sweet enough so I have added only 2 tablespoons of sugar. Please adjust the sugar quantity as per your fruit’s sweetness.
INSTRUCTIONS
  1. Make sure all the ingredients are chilled or right out from the refrigerator.
  2. Take all the ingredients into the blender and blend it for 2 minutes.
  3. Pour into individual glasses.
  4. Garnish with a mint leave and serve.

Taste – sweet, thick with mango flavor

Shelf life – it can be kept in refrigerator up to a day (24 hours).

Serving suggestions – usually served as a beverage along with the meal. You can drink it at any time of the day. Even you can serve it as a healthy dessert too.

Tips –


- Do not use sour yogurt as we are making sweet lassi.

- You can use canned mango pulp. If pulp is sweet then skip the sugar. If using the canned pulp then color of the lassi might be different and brighter.

I have served delicious mango lassi as a dessert on last Saturday. It can be served along with the meal as a beverage.

Beat the heat with chilling ice tea.

Iced tea, once a drink only heard about on American TV shows, is becoming more popular in New Zealand. A deliciously refreshing beverage, iced tea is a perfect pick-me-up on a warm day and a great alternative to those sugar-packed canned sodas.
Making iced tea is a breeze. Below, you’ll find three iced tea recipes: plain, lemon and peach.
Plain Iced Tea
Make a brew of tea using 4 teabags and 4 cups of water (filtered water will give a far better taste). Allow the tea to steep for no more than 5 minutes, otherwise it may become bitter. You can use either traditional black tea or lighter-tasting green tea.
In a large jug place 1 cup of sugar and 4 cups of cold (filtered) water. Stir until the sugar is dissolved.
Pour your brewed tea into the sugar/water mixture and stir. Adding the hot tea to the cold water helps prevent the finished drink from becoming cloudy.
Allow to cool further then serve in glasses over ice. Sprigs of mint make an attractive garnish.
Lemon Iced Tea
For a tangy alternative, make a jug of plain iced tea as above, but add 60 ml of lemon juice to the cold water before you add the hot tea.
Sweetness is a matter of taste and you may find that the tartness of the lemon demands a little more sugar.
Peach Iced Tea
Peach flavored
iced tea is one of the most popular commercial varieties of the drink on the market. You can make your own by following the peach iced tea recipe below.
Peel and slice two fresh ripe peaches. If peaches are not in season you can use canned peaches instead.
Place the chopped peaches in a large jug along with 4 teabags (either black or green) and add 4 cups of boiling water.
Allow the tea to steep for five minutes then remove the tea bags.
Add one cup of sugar and allow to dissolve.
Add 4 cups of cold water and allow the beverage to stand until cool.
You can either remove the peach slices now, or leave them in the jug as you serve the drink (in glasses over ice).

Electric lemonade- Refreshing summer drink

Electric Lemonade

Ingredients
1 cup fresh squeezed lemon juice
1/4 cup sugar
1/2 cup fresh mint leaves
1 cup sparkling mineral water
  Splash ginger ale
2 cups ice
1 cup vodka
  Frozen vodka or sparkling mineral water
  Mint sprigs and lemon slices for garnish
Directions

Chill 4 serving glasses in the freezer. Combine lemon juice, sugar, mint, mineral water, ginger ale, and ice in a blender. Slowly blend until thick.
Remove the four glasses from the freezer and pour a jigger (1/4 cup) vodka into each. Top with frozen lemonade mixture.
Add a straw and garnish each glass with a fresh mint sprig and a slice of lemon. Makes 4 servings.

Summer tips to stay fit and healthy

Keeping cool when temperatures reach record highs isn't just about comfort. Dangerously high temperatures can result in heat-related illnesses ranging from heat cramps to heat exhaustion and heat stroke. The following tips can help you keep cool all summer long.
  1. Alter your pattern of outdoor exercise to take advantage of cooler times (early morning or late evening). If you can't change the time of your workout, scale it down by doing fewer minutes, walking instead orrunning, or decreasing your level of exertion.
  2. Wear loose-fitting clothing, preferably of a light color.
  3. Cotton clothing will keep you cooler than many synthetics.
  4. Fill a spray bottle with water and keep it in the refrigerator for a quick refreshing spray to your face after being outdoors.
  5. Fans can help circulate air and make you feel cooler even in an air-conditioned house.
  6. Try storing lotions or cosmetic toners in the refrigerator to use on hot, overtired feet.
  7. Keep plastic bottles of water in the freezer; grab one when you're ready to go outside. As the ice melts, you'll have a supply of cold water with you.
  8. Take frequent baths or showers with cool or tepid water.
  9. Combat dehydration by drinking plenty of water along with sports drinks or other sources of electrolytes.
  10. Some people swear by small, portable, battery-powered fans. At an outdoor event I even saw a version that attaches to a water bottle that sprays a cooling mist.
  11. I learned this trick from a tennis pro: if you're wearing a cap or hat, remove it and pour a bit of ice cold water into the hat, then quickly invert it and place on your head.
  12. Avoid caffeine and alcohol as these will promote dehydration.
  13. Instead of hot foods, try lighter summer fare including frequent small meals or snacks containing cold fruit or low fat dairy products. As an added benefit, you won't have to cook next to a hot stove.
  14. If you don't have air-conditioning, arrange to spend at least parts of the day in a shopping mall, public library, movie theater, or other public space that is cool. Many cities have cooling centers that are open to the public on sweltering days.
  15. Finally, use common sense. If the heat is intolerable, stay indoors when you can and avoid activities in direct sunlight or on hot asphalt surfaces. Pay special attention to the elderly, infants, and anyone with a chronic illness, as they may dehydrate easily and be more susceptible to heat-related illnesses. Don't forget that pets also need protection from dehydration and heat-related illnesses too.

PAU develops kit to test purity of drinking water

LUDHIANA: The Punjab Agricultural University (PAU) has developed a cheap way to test whether the water you are drinking is contaminated or not. They have put forward a 'water testing kit' — a handy way to test your so-called 'filtered water' — in the front at the Kisan Mela as well.

Since water is essential to sustain life, its satisfactory supply must be made available to consumers. Despite the fact that the 'right to drinking water' is now a part of human rights, one-sixth of the world population still does not have access to safe drinking water. The World Health Organization (WHO) estimated that up to 80% of all sicknesses and diseases in the world are caused by inadequate sanitation, polluted water, or unavailability of water. In India, about 21% of all communicable diseases are water-borne, and among them, diarrhoea is responsible for 25-30% of deaths among children below the age of five years.

Keeping these points in view, the PAU's Department of Microbiology has developed a simple, portable, and inexpensive bacteriological water testing kit to determine the easy potability of drinking water. This kit is available in the Department of Microbiology for Rs40 only.

How to use kit:

Cut open the aluminum foil and keep the rubber stopper intact.

Open the kit near a water source and the water sample to be tested or screened for bacteriological potability should be aseptically dispensed in kit bottles up to the calibrated mark (approximately 15ml).

Allow the kit to stand at a warm place for 24 hours.

Bacterial contamination is indicated when the content of the kit bottle shows a change in colour, turbidity, sediments, pellicle, and popping of lid within 12 hours.

For disposal of the kit, add four drops of dettol/disinfectant in the kit before disposal.

Antibiotic susceptibility of consortia can be directly done.

Advantage of PAU kit:

It is the cheapest method known so far.

It is very handy to use.

To perform the test, one needs to add water to the kit and leave it aside.

No equipment is required.

Colour change denotes the presence of microbes.

Two astronauts set for longest Nasa human mission to space


WASHINGTON: Two astronauts were on Friday ready for a 12-month stay at the International Space Station (ISS) in a longest human expedition to space so far and testing the limits of human research, space exploration and the human spirit. 

Nasa's Scott Kelly and Russian cosmonaut Mikhail Kornienko will be part of research to help the US space agency and the international partners reduce risks and better understand how to ensure that astronauts will thrive on longer missions. 

The launch was set for 3.42pm EDT on Friday (1.12am IST on Saturday). 

Most expeditions to the space station last four to six months. 

By doubling the length of this mission, researchers hope to better understand how the human body reacts and adapts to long-duration spaceflight, the US space agency said in a statement. 

This knowledge is critical as Nasa looks toward human journeys deeper into the solar system, including to and from Mars, which could last 500 days or longer. 

It also carries potential benefits for humans here on the Earth, from helping patients recover from long periods of bed rest to improving monitoring for people whose bodies are unable to fight infections. 

Long exposure to a zero-gravity environment can affect the human body in multiple ways. 

Some physical symptoms can include changes to the eyes, muscle atrophy and bone loss. 

Human psychology is also an important area of study, as the effects of living in isolated and small spaces will be important to understand ahead of future human missions to Mars. 

There are seven key elements of research on the one-year mission. 

Functional studies will examine crew member performance during and after the 12-month span. 

"Behavioural studies will monitor sleep patterns and exercise routines. Visual impairment will be studied by measuring changes in pressure inside the human skull," the statement read. 

Metabolic investigations will examine the immune system and effects of stress. 

Physical performance will be monitored through exercise examinations. 

Researchers will also monitor microbial changes in the crew, as well as the human factors associated with how the crew interacts aboard the station. 

A number of spaceflight endurance records will be broken during the one-year mission, including the most cumulative time in space for any US astronaut. 

Kelly will spend 342 days off the planet resulting in a total of 522 days in space, allowing him to surpass current US record holder Mike Fincke's mark of 382 days.
